Rulings question.

When a creature becomes a copy of a creature, how many of its original properties does it retain?

The example here is I used Mimeoplasm to copy Hand of the Praetors (so sue me) and after the copying and exiling resolves, my opponent tried to cast a spell that destroys a target blue permanent, claiming it was still blue. We got into a huge argument over it, and though the game was cut short, we're still going at it. I wasn't able to find any answers online, so here's the question summarized.

How many of its original properties, including color, name, and creature type does a copy have?
