I think the issue is that when you publish a card it saves that whole card image as nothing more than an image, including the text, making it uneditable. I think. To that degree, you'd have to be putting the new text over top of the old. Tbf, I don't know a whole lot about it and I'm not too knowledgeable on the software or anything.
